Food handling and hygiene requirements apply, and in many settings a nominated food safety supervisor is required as well. Responsible service of alcohol requirements apply wherever alcohol is being served.
The larger exposure for many venues is pay. Hospitality runs on part-time and casual staff, split shifts, penalty rates, overtime and allowances, and award interpretation errors compound quietly across a whole roster.
Young workers are the other significant risk. A large share of hospitality staff are in their first job, which raises the obligation to instruct and supervise properly, and lowers the likelihood that anybody will raise a concern about anything.

The Fair Work Ombudsman ordered that MasterChef Australia’s judge and celebrity chef George Calombaris MAdE Establishment group of companies make a $200,000 contrition payment as a result of the underpayment of more than 500 current and former employees of $7.8 million in salary and superannuation.
